Vegan In Ten (Or Less)
Alright, so I know that several recipes I post here may seem pretty complex and require way too many ingredients. I suppose that's what happens when you aim to be too creative and ambitious. Which isn't a bad thing, it's just that recipes shouldn't always have to be so complicated to taste good and still be nutritious. Agree?
I'm trying to take a more simplistic approach to some of my recipes lately, especially since I started noticing that I was cramming way too many ingredients in to my morning smoothies. Almond butter, banana, frozen strawberries and almond milk spun around in a blender is one of the simplest and most satisfying smoothie combinations, but I was stripping away the raw, natural flavors by trying to add a little too much of "this and that." With so many simple, fresh ingredients that are available and in season, it's time to let those flavors shine and put away the ten thousand accompanying ingredients that may otherwise steal the spotlight.
I've revisited a few of my bookmarked recipes on Foodgawker and pinned down a solid handful or two of vegan-friendly recipes that only require ten ingredients or less. So whether you're just dabbling around with vegan recipes lately, celebrating Meatless Mondays or simply just looking for delicious, low effort recipes to enjoy this summer, well then you are in luck my friend. Plus a few sweet treats included at the end, to make sure that we hit all the right spots. Yes, I made sure that those are ten ingredients or less as well.
We could all use a little more quinoa in our lives. It's so darn easy to cook and when mixed with coconut oil, lemon, thyme and honey in this recipe, it's a swoon-worthy and satisfying meal that will cure your blues any day of the week.
Sautéed mushrooms meet avocado and hummus in these comfort-style quesadillas. Grab some fresh greens for extra company and get to work (but just barely).

I wouldn't blame you for getting selfish with this side-dish turned meal (with pita chips and veg...or anything, really) and sharing it with none other than...yourself.
Would you believe me if I said that you can make your own ice cream with just two ingredients and a blender...alright, and a cast-iron skillet?
