Sundays, you are my new favorite. The day of the week that is usually criticized for bringing on the pre-Monday blues. This past Sunday in particular reminded me why. Despite a recent move, attempting to settle into a new routine and inconsistent sleeping patterns, I was finally able to have such a good night's sleep. The kind where you don't remember any of your dreams, don't have to wake up to go to the bathroom, and don't flinch even once. My rise and shine happened very early on Sunday morning with the sunlight drenching into my room. I felt completely refreshed and proud of the small victories made in the process of setting up my new place. The Sunday morning tunes were on, my favorite pair of slippers were on, and my dancing feet were moving about the kitchen as I mulled over my early morning breakfast options.

The spring-like weather outside had me craving something cold, but more filling than a smoothie. I was inspired by a recent Breakfast Master Class that I had taken while in NYC, and so I went to town on an acai bowl. And not to toot my own horn, but it may have been one of the best acai bowls that I've ever had, which is exactly why I want to share it with you so that you can re-create your own. I truly think the secret was this somewhat under-the-radar amazing nut butter by JEM. It's pure silk and just makes you feel golden, from the inside out. So worth buying it, you'll see why, I promise.

A little of this here and a little of that there, all blended together and nearly overflowing in my bowl, there I was, ravenously scraping (more like unselfishly licking) every last bit.

Oh myyyy goodness. Get in on this, pronto. Adjust and tweak my recipe wherever you wish. I really don't think that you can go wrong...

Superberry Sunday Acai Bowl

2 packs of frozen acai (I use Sambazon Original Rio Blend - Whole Foods & plenty others carry it)

1 (heaping) tbsp of your favorite nut butter (in this case, JEM's Superberry Almond Butter)

1 tbsp maca powder (energy booster, libido enhancer, hormone balancer)

1 banana 

A few splashes of almond milk (I never measure, always just eyeball it and add little by little as needed until desired consistency is achieved)

Here's the simple part. Toss all of it into a high-speed blender and when it's good to go, pour it into a bowl. Sprinkle with any of your favorite toppings, whatever you happen to be in the mood for (I wanted a bit of everything, so added some goji berries, hemp seeds and Purely Elizabeth Blueberry Hemp granola to mine).
