Darling Sunday Moments

I admit, not all Sundays are these picture perfect moments that prompt those must-share-it-on-Instagram posts. Sometimes I'm buried under blankets, craving the cool side of my pillow well into noon before I even dare consider making a move out bed. Sometimes it's a little too quiet and too lonely and my plush couch is feeling like my better half, always the big spoon of course. Sometimes I'm in a cranky, groggy, unmotivated, slow moving, pantry ravenous, don't wanna get out of my PJs kind of mood. But sometimes, there are those golden Sunday mornings where every little thing seems to fall into place and I reach for the repeat button in hopes to replay them over and over again. 

Those are the kind of Sundays that I love and cherish. Those are the kind of Sundays that help to keep my heart light, but full. And sometimes that means a golden morning hour that begins with a big 'ole matcha latte, some peanut butter pancake toast and the latest issue of Darling Magazine to energize, inspire and empower. 

Since discovering my strong sensitivity to caffeine, I've turned to matcha as a way to help sustain my energy in the mornings while still having something frothy and hot to sip on. It certainly was an acquired taste at first, but now I crave it. While living in New York, matcha started making its grand debut as the next best thing, making its way onto specialty coffee shop menus at the speed of which almond milk was replacing regular milk for coffee. Shortly thereafter, places like The Matcha Bar and Chalait opened up, specializing in this bold green beverage.  

This was also around the time that I discovered the beauty that is Darling Magazine, an independent magazine celebrating women, which honors natural beauty, self-respect and integrity. Darling challenges cultural "ideals" of beauty and offers tangible advice on taboo issues such as depression, anxiety and eating disorders. The photography itself is enough to make you want to curl up with it on a quiet Sunday morning, which is why I enjoyed doing just that with my wholesome little breakfast. The light coming into my apartment that morning was nearly perfect, my energy was at a high and the afternoon followed with a slow flow home yoga practice, personal reflection, and an abundance of "me" time that I was so grateful for. Proper nourishment is so important in helping to keep us on track, especially first thing in the morning, so I tend to try and drag out my breakfasts as long as possible during the weekends. 

Coconut Matcha Latte

1 cup coconut milk

2 tsp matcha powder

1 tbsp raw honey

2 tsp ALOHA Coconut Water Powder (use code ANDBEWELL at checkout for 20% off your purchase)

Heat coconut milk on high in a stovetop kettle or simmer over medium heat in a saucepan. Once heated, carefully pour the coconut milk into a blender, adding the matcha powder, raw honey and optional coconut water powder. Blend on a low setting until thoroughly combined and frothy. Pour into your favorite mug & savor slowly. 

Peanut Butter Pancake Toast

1 tbsp coconut oil, plus more for toasting

2 tbsp peanut butter powder (I've been fancying Santa Cruz Organic Peanut Butter Powder with Chia lately)

2 slices bread of choice (I used organic flaxseed bread; found locally at Ellwood Thompson's

Pure maple syrup, to drizzle

Crunchy toppings of choice, such as cacao nibs, hemp seeds & sunflower seeds 

Heat oven to 325F. Spread coconut oil on to each slice of bread and pop into oven, directly on to baking racks. Let it set for no more than 2-3 minutes. In the meantime, melt 1 tbsp of coconut oil in a small bowl and then stir in peanut butter powder until well mixed. Remove the toast from the oven and place on a plate. With a spoon, drizzle the coconut oil & peanut butter powder mixture on to each slice of toast. Sprinkle with crunchy toppings & then give it a drizzle of maple syrup. Use a knife and fork to cut as you would a stack of pancakes for optimal enjoyment.
