Mum's The Word
This Sunday is a day all about the most important woman in our lives: mom. We should make sure she knows how loved and important she is year-round, but Mother's Day should be extra special for her. And of course that means she should be very well fed!
Instead of taking her out for breakfast or brunch, whip something up for her in the comfort of her own home. A few delicious ideas to consider:
Moroccan Guacamole Toasts with Fried Egg. Because avocados + eggs are like a match made in brunch heaven.
Banana Bread Donuts with Maple Almond Glaze and Coconut Whip. Uh, yeah. Because selfishly you know that you'd want at least one, too.
Sunrise Mimosas. For a bubbly little Sunday toast.
Or perhaps mom is into sippin' on smoothies just like you? Or in this case, a smoothie that you can eat with a spoon. Get her out for a nice walk or jog (together, of course) and then cool off with some delicious, nourishing smoothies. I'm thinking that this simple Fig and Banana Smoothie Bowl might be a nice treat.
Five Recipes To Try Now
Spring recipe inspiration has been flying all around me lately. People are just so darn creative in the kitchen these days! Here are five recipes that I'm eyeing closely and think that you should try this season as well.
Brown Rice Salad with Green Miso Dressing, because what's not to love about the richness of brown rice paired with a little avocado, snowpea sprouts, sesame seeds, tofu and a mouthwatering umami-style dressing to drizzle all over?
Brussels Sprouts Pizza with Balsamic Red Onions. The thought of caramelized onions and brussels sprouts is enough to make your mouth water, but when combined onto crispy pizza dough, that's a whole new ball game. Who cares about a little onion breath for a few hours? Worth it.
Roasted Sweet Potato Wedges with Avocado Chimichurri. Genius. That is all.
Mexican Grilled Corn Avocado Toast. It's your margarita's best friend and another excuse to consume even more avocado toast. Grilled, charred and buttery. Yes, please.
Roasted Poblano Hummus with Mango and Coconut. The gal who came up with this should be crowned Top Chef. It's spicy and sweet, to hit all the right notes on your tastebuds.
When Cinnamon Buns (and Rolls) Make You Go Oooh
I don't know what it is but I have been craving cinnamon buns/rolls lately and have the itch to make a fresh batch sometime very soon (pending how polished up I am with my baking skills). And when you start throwing in some summer berries, dark chocolate or figs, that's when you start to go oooh. You'd be surprised at how many vegan friendly recipes there are, so I've wrangled a few. We'll see where I net out. You do the same.
When you put a spring/summer spin on your buns and rolls, I suppose the result is something like these Orange Pistachio Cinnamon Buns or Spelt Summer Berry Buns with Maple, Orange & Cardamom. A little Pillsbury Orange Glazed Cinnamon Rolls never hurt anyone, but these....these will certainly do.
And can we fixate on how insanely good this Cinnamon Roll Smoothie probably tastes? Again, people are genius.
